 Yes that is what I mean - just need to re-connect the leads to the stator (armature) and field (rotor) winds, not necessarily re-wind them to make them 
 Nstator-Nrotor    N-rotor N-stator (how GRAY motor is)
 

 Note:
 Like you wrote "(N_N  S_S)" would not be in "GRAY" mode, because when for example a 2-pole rotor flips around 180 degrees now for the second pulsed-position in a rotation, in would now be N_S  N_S for attractive pulse that way so it would still work if you timed the pulse attractive on that pulse but it would not be "pure bucking" power going into the coils every pulse.
