There must not be a phase shift between the tension and the current through a thyristor (SCR) as this prevents it from shutting off. That is the gate signal must follow (be in phase with) the current through the thyristor.
Here is one half of your circuit:
The problem is that the gate signal is taken from a part of the circuit having the green current through it where the voltage is in phase with the current. But there is another current path through the inductor (variac). This current isn't in phase with the green current. As a SCR can't shut off before the current through it is below its cut off level it stays turned on until that other (red) current flow is disrupted as well as the red current.

I have problems unloading the thyristors with smaller transformers, the energy is probably not absorbed so quickly or the inductor acts as a source of energy and the scr can not shut down, I have to provide each connection with a freewheeling diode yet? I have tried to connect capacitors in parallel with little success, unfortunately, has apparently gone through the too fast discharge again a thyristor broken. Greetings Sven

piezo material is an interesting device it haves capacitive property as well as reactive one just dont overdrive it ceramic & crystal form tends to explode
if over driven beyond its physical tension limit , used as resonator works fine
for RE experimentation

a hi frequency waveform can be tailored to be MODULATED with a lower frequency wave as to create a sine-wave in another frequency OUTPUT alike cycloconversion in solid state .... some trace inverters worked that way Ismael aviso used similar approach with the power inverters he used, , some inverters may be modified for quadrature modulation permitting amplification to occur

Can you give me all the information about Diode Plug and only this for the implementation. I would like to work through this topic explicitly. The piezo element that you can still take is new to me. Are the piezo elements highly resistant to high voltages?
I now have both Variacs and have tested them. They have according to impedance measurement at really exactly 12 Henry at max. Stop and no isolation problems with almost 30 years old devices can not always be sure. I'm about to insert it into the system now.
I am very grateful for your help and I can only recommend it to everyone warmly starting this experiment themselves. I offer my help to everyone.
