That's only if the core doesn't saturate. Else the winding has only its series resistance and a little inductance as if the winding switched to an air core. To check for saturation measure the current with a scope. If the curve is sinusoidal or a parabola there is no saturation. If on top of the parabola there is a surge the core has gone into saturation and the inductance doesn't limit the current.

If the load disappears the flyback voltage will increase enough to preserve the current at the time of interruption. This happens even if the voltage has to punch through some insulation or just flash through the air. Consider it like gripping a spinning flywheel where the force is equivalent to the voltage and the spinning is equivalent to the current. It will take a big force to stop the current (revolutions). This big force is the flyback voltage (force) when trying to stop the current (revolutions). This is what kills the diodes I guess.
